Dr. Robyn Smith, one of the hidden queens of American rum (and proprietor of YouTube channel This Blog's NEAT over at / @robynsmithphd ), is at it again with her third release and she's sent a few samples over. Her Rum et al. series is a science-themed skunk works inside of Dead of Night distillery, using a tiny pot still and basic off-the-shelf components - including molasses that FedEx is absolutely not equipped to handle, apparently - to make what I think are some of the most interesting rums in the US. Baseline was the long-fermented original ( • Rum et al. (This Blog's NEAT/Dead of ... ), then the first "Variable" was Dunderclap - the same, but with dunder ( • Rum et al. (This Blog's NEAT/Dead of ... ). Tailspin is the new one, and... look, you can just watch the video if you want a full explanation. Or better yet, watch Robyn's ( • My new rum batch! Distilling with tai... ). But basically what you've got here is a wash that starts out much like Dunderclap (so, fermentation with molasses and dunder), but then for the second distillation run the "low wines" (= product of the first run) gets distilled along with tails (= the grungy low-ABV stuff you get at the end of distillation) from previous runs, along with dunder thrown in for fun. And then she does this again for still another run. Sounds fun, right? Aw yeah, spin it ( • TaleSpin - Theme Song | Disney+ Throw... ): Rum et aliae "Variable: Tailspin" Unaged Pot Distilled Molasses Rum, 49% version (distilled by Dr. Robyn Smith in collaboration with Day of Night distillery, Los Angeles; long-fermented baking-grade molasses with dunder, triple pot distilled with tails and more dunder, bottled 2025; 49% ABV), 86/100 Rum et aliae "Variable: Tailspin" Unaged Pot Distilled Molasses Rum, still strength version (distilled by Dr. Robyn Smith in collaboration with Day of Night distillery, Los Angeles; long-fermented baking-grade molasses with dunder, triple pot distilled with tails and more dunder, bottled 2025; 75.8% ABV), 86+/100 The still strength version needs some care to coax out the goodness (and, gun to my head, I'd probably buy the 49% myself) but these are both very good unaged rums, very much on the citrus-flowers-chalk dust side of things.
