BEETROOT & CARROT SALAD 11:40 Ingredients: 3 grated carrots 1 grated beetroot A handful or so of fresh mint 1/4 cup of sultanas Dressing: 2 tbsp of olive oil 1.5 tbsp of maple syrup 1/2 tsp garlic powder 1/2 tsp paprika 1/2 tsp cinnamon 1/2 tsp cumin 1 lemon (juiced) 2. LENTIL & PUMPKIN SALAD 16:02 Ingredients: 1.5 grated carrots 100g spinach A handful or so of fresh mint A handful or so of fresh flat parsley 1/2 punnet of cherry tomatoes 1 medium sweet potato (roasted) 1 cup of cooked quinoa 1/2 yellow or red capsicum aka Bell Pepper 1/4 red onion (finely chopped) ~optional 1 Lebanese cucumber Dressing: 1/2 lemon (juiced) 1-2 tbsp olive oil ~optional 3. MEXICAN BEAN SALAD 22:05 Ingredients: 1.5 grated carrots 1/2 cup frozen corn (thawed) 1/8 Kent Pumpkin aka Kabocha Squash (roasted) 1 capsicum aka Bell Pepper(I used 1/2 of yellow and about 1/2 of red) 1 cup of cooked quinoa 1/4 red onion (finely chopped) ~optional A handful of coriander (fresh or lightly dried) Dressing: 1/2 lemon (juiced) 2/3 avocado (mashed) *can use more avo if you have it!
