Hi Everyone-- I'm back! INGREDIENTS Crust: -1 box yellow cake mix (pick your favorite) -1/2C butter (melted) -2 eggs Gooey Filling: -8oz cream cheese (room temperature) -3 eggs -1/3C fresh lemon juice -zest of one medium to large lemon -3C powdered sugar (sifted) INSTRUCTIONS (1) Preheat oven to 325F. (2) In a bowl combine yellow cake mix, melted butter, and eggs. Mix until well combined. (3) Press into a 13x9" greased pan or pan with parchment paper (but still grease the sides) until flat and even. Place it to the side. (4) In a bowl beat cream cheese until smooth and then add eggs one by one, mixing in between. (5) Add lemon juice and lemon zest to mixture. (6) Gradually add powdered sugar to mixture and beat until it is a custard consistency. (7) Bake until golden brown and sides begin to pull away from the pan. Approximately 35-45 minutes depending on your oven. (8) Take a butter knife around the edges. This will help the lemon ooey gooey to release after it cools. (9) Let it cool completely. Then take it out of the pan, cut, and serve! Like. Subscribe.
