It is a very rustic and tasty first course that is part of the Salento gastronomic culture. The recipe for ciceri e tria has very ancient origins, most likely it is necessary to go back to the Arab domination, because it is precisely in that period that the sources provide us with information on holidays such as the spring equinox during which the old legumes were offered. The dish in question has depopulated, however, as it is on the occasion of the most recent festivities of San Giuseppe, in which long tables were set up in the Salento villages and everyone ate together. Ciceri and tria are nothing more than pasta, in this case a sort of tagliatella, with chickpeas. Being a popular and familiar recipe, it can undergo some small variations based on the house in which it is made, but this Apulian recipe was given to me by a friend of mine and immediately convinced me for its incredible goodness. Here's how ciceri e tria are made!
