Today I’m making a layered butter bread that’s easier than börek, softer, flakier, and honestly one of the most delicious breads you can bake at home. We start by mixing 625 g bread flour, 10 g salt, 20 g sugar, and 10 g instant dry yeast. Then we add 200 g water + 206 g milk and knead until the dough becomes soft and smooth. After adding 40 g vegetable oil, the dough turns silky and perfect for layering. This recipe has only one resting stage. There is no resting needed while rolling or stretching the dough. Each sheet is rolled out thin, brushed with melted butter, shaped, placed on the baking tray — and only after shaping, we let the dough rest for 30–40 minutes. This is the only resting time in the entire recipe. How the layering works: – Roll out five thin sheets, – Sprinkle cornstarch between each layer, – Cover the sheets so they don’t dry out, – Roll all five sheets together again, – Stretch them as thin as you like. Important tips for perfect layers: • If you want extra thin layers, roll once, gently separate all the sheets, dust with more cornstarch, and continue rolling. • Don’t skip the cornstarch — it keeps the layers beautifully separated. • High–quality bread flour is one of the biggest secrets behind a soft, flaky, buttery bread. • Brush each layer with melted butter for a flaky, crispy texture. • Always cover the dough while working so the surface doesn’t dry. • Preheat your oven completely before baking. • Bake at 180°C (350°F) for 20–25 minutes until perfectly golden brown. This bread has a soft interior, crispy flaky layers on the outside, and it’s much easier than traditional börek.
