The karela is lightly sautéed and then cooked in a rich onion-tomato masala with aromatic spices like cumin, fennel, hing, and garam masala. This recipe reduces bitterness while keeping all the authentic flavors intact. Perfect to serve with roti, chapati, or simple dal-rice, this homemade karela sabzi is healthy, tasty, and full of traditional Indian flavors. Try this easy step-by-step recipe and enjoy karela like never before 📝 Ingredients: • 3 tbsp oil • 3–4 medium bitter gourds (karela), washed and sliced • 1 tsp cumin seeds • 1/4 tsp asafoetida (hing) • 1 tsp fennel seeds • 3 medium onions, finely chopped • Salt to taste • 4–5 garlic cloves, finely chopped • 1 tsp ginger paste • 2 green chilies, finely chopped • 1/4 tsp turmeric powder • 2 tsp Kashmiri chili powder • 1 medium tomato, finely chopped • 2 tsp coriander powder • 1/2 tsp cumin powder • 1/2 tsp garam masala powder • 2 tbsp water • Fresh coriander leaves, chopped (for garnish) 👩🍳 Method: 1️⃣ Fry the Karela:Heat 3 tbsp oil in a pan. Add sliced bitter gourd and sauté on medium heat for 5–8 minutes until slightly golden. Remove and keep aside. 2️⃣ Prepare the Tempering:In the same pan, reduce excess oil if needed. Add cumin seeds, asafoetida (hing), and fennel seeds. Let them splutter. 3️⃣ Cook the Onions:Add finely chopped onions and salt. Sauté until soft and light golden. 4️⃣ Add Garlic & Ginger:Add chopped garlic and sauté for a minute.Add ginger paste and sauté for a few seconds. 5️⃣ Add Green Chilies & Spices:Add finely chopped green chilies.Add turmeric powder and Kashmiri chili powder. Mix well. 6️⃣ Add Tomato:Add finely chopped tomato. Cover and cook until soft and mushy. 7️⃣ Add Remaining Masalas:Add coriander powder, cumin powder, and garam masala powder.Add 2 tbsp water, mix well, cover and cook the masala for 1–2 minutes on low heat. 8️⃣ Combine & Finish:Add the fried bitter gourd and mix well with the masala.Cook on low heat until the oil separates from the masala. 9️⃣ Garnish:Garnish with chopped coriander leaves and serve hot. 🌿 Serving Suggestion: Serve with roti, chapati, or simple dal-rice for a comforting homemade meal.
