Facebook LIve every Sunday at 10am / atouchofmagiccork CHOCOLATE CHIP NUTELLA COOKIE PIE 200g salted butter 250g soft brown sugar 2 egg yolks 300g plain flour 1 tsp baking powder 200g Nutella 100g dark chocolate chips 50g dark chocolate chips for top decoration METHOD Pre heat oven to 180C/350F/Gas 4 Grease a 9” round loose Bottom tin (no need to line it) Cream butter and sugar until blended . Add egg yolks. Scrape down the bowl to make sure all combined. Sprinkle in flour and baking powder. Finally add chocolate chips . Blend dough for 5 seconds until fully mixed. You can now do a victory dance in the kitchen as you’re nearly finished! Dough should weigh approximately 900g or as close as dammit. Take a third (300g ) and reserve for the top , add remaining 600g cookie dough to greased tin and compress to fit Push dough out to the edge and create a little rim or lip . This will help create a thin cookie base so it bakes evenly , the sides will also help keep the filling in . Add 200g Nutella and spread it evenly across the base. Try not to lick the spoon or your fingers…. It’s tempting! Chill the cookie pie for 20 minutes to set the Nutella. Once set use the remaining dough and spread it across the top to create the lid of the cookie pie . Transfer to a pre heated oven and drop the temperature to 160C and bake for 25 minutes .Once baked, leave to set for at least an hour, it will still be warm. Cut into wedges , divine served with vanilla ice-cream and a drizzle of caramel TRISH’S TIP Weigh the jar of Nutella and bring scales to zero, now anything you scoop out will be measured . Keep scooping until the scales reads 200g … BOOM! Quick and easy measuring To make this gluten free add ½ teaspoon Xanthan gum and make sure you use GF baking powder. Add 50g cream cheese when adding your butter and it helps with the “grit’ texture normally associated with GF bakes . If you prefer you can use Biscoff spread or peanut butter , you can add Oreo biscuits , chocolate pieces on top before you put the lid on! You can go nuts!!!
