Cheung fun, or steamed rice noodles, have such a delightful and unique mouthfeel that makes it a signature dish to get at dim sum. Amongst the sea of options, I can't bare to let it go to waste despite how simple and straightforward it is. Perhaps that's the appeal of it, and what you expect is what you get. But despite the simplistic flavor, it's more a textural experience that is the selling point here. Smooth as silk comes to mind when I think of this version of steamed rice noodles. Usually you can find it filled with shrimp, beef, or just plain with cilantro! Again, simplicity is the key here (and soy sauce too of course ;) So what are you waiting for? Grab a whisk and a bowl so you can enjoy these dim sum favorites today! Makes approximately 4 cups of batter (approximately 20-24 rice noodle rolls if using the same size pan used in the video). Rice noodle batter: 100 g rice flour 10 g wheat starch 10 g tapioca flour 400 mL cold water salt, to taste 1 tablespoon oil 1 lb. shrimp (peeled and deveined) for filling Sweet soy sauce: 1/4 cup soy sauce + 1 tablespoon granulated white sugar (microwave until sugar dissolves and set aside) Preheat your square cake pan (I used an 8" x 8") in a large pot filled with a few inches of water for steaming. Lightly grease the cake pan, cover, and preheat over medium high heat for 5 minutes. Meanwhile prepare the batter. Whisk together all ingredients in a large bowl. Once the pan is hot and steamy, pour 1/4 cup of batter and swirl around so there is batter making contact from edge to edge of the pan. Cover and steam for 2 minutes or until transparent. Add shrimp in the center and steam for an additional 2-3 minutes until shrimp are pinked and opaque. Remove from pan and allow to cool for a few minutes or until lukewarm. Gently use a rubber spatula to release the rice noodles from the pan's surface and roll. The rice noodle once steamed should adhere to itself creating a seal.
