*updated recipe* One Pan Chicken and Orzo Ingredients 1.5-1.75 lbs boneless, skinless chicken thighs 4 garlic cloves, minced 1 pint grape or cherry tomatoes, sliced 2 cups orzo 4 cups chicken broth 3-4 tablespoons lemon juice Zest of 1 lemon 4 cups baby spinach or 1 bunch kale, stems removed and chopped 3 tablespoons olive oil Directions Season chicken on both sides with salt and pepper. Heat oil in a pan over medium high heat and sear chicken for 4 minutes on each side. Remove and set aside. Add tomatoes and garlic, season with salt and cook for 2 minutes. Add orzo and a little bit more oil and cook for another minute. Add chicken broth, lemon juice and lemon zest and season well with salt and pepper. Return the chicken back to the pan and bring to a boil. Cover and let simmer over medium low heat for 12 minutes. Remove chicken and stir in kale and olive oil and kale and adjust seasoning with salt and pepper if needed. If using spinach, continue to cook until just wilted.
