Italian Chocolate Spice Cookies - Santina’s Biscotti Scuri!

These cookies are an Italian tradition, especially during the holidays and special events. They are made with cocoa, coffee, walnuts, raisins and spices which bring all the flavors together into a mouth-watering, delicious cookie! My beloved mother, Santina, used to always make huge batches of her cookies when Christmas season began. Since her passing, I keep this tradition going with my own family and wanted to share this delicious recipe of hers with you! There are many variations, but this is the one my mother perfected on her own and it was loved by many. Oh, and by the way, this delectable cookie happens to be vegan! Recipe is below. SANTINA'S BISCOTTI SCURI - (dark cookies) Preheat oven 350° F 3 1/3 cups flour 1 tablespoon baking powder 2/3 cup shortening 1/2 cup hot coffee 1/2 cup hot water 1 1/4 cup white sugar 1/2 cup cocoa powder 1/2 teaspoon salt 1/2 teaspoon allspice 1/2 teaspoon cinnamon 1/2 teaspoon vanilla extract 1/2 cup chopped walnuts 1/2 cup coarsely chopped raisins Icing: 1 1/2 cup confectioner's sugar 1 teaspoon vanilla extract 2-3 tablespoons water Bake cookies in 350° oven for 10 minutes, until firm to the touch.
