Here is an easy Vangi Bhat (Brinjal Rice / Eggplant Rice) recipe in English. This is a popular Karnataka-style dish made with brinjal, spices, and rice. Ingredients For rice:1 cup rice (any variety) 2 cups water Salt (as needed) Vangi Bath powder For the main dish: 6–8 small brinjals (cut into thin slices) 1 medium onion (optional) 2 tbsp oil ¼ tsp mustard seeds ¼ tsp cumin seeds Curry leaves 1 pinch turmeric powder Salt to taste Tamarind juice (2–3 tsp) Jaggery (small piece, optional) Fresh coriander (for garnish) 1 tbsp roasted peanuts or cashews (optional) Preparation Steps1. Cook the RiceWash rice and cook it with 2 cups water.Spread on a plate to cool (avoid sticky rice). 2. Make the Brinjal MixHeat oil in a pan. Add mustard seeds, cumin, curry leaves. Add sliced brinjals and sauté. Add turmeric and salt. Add little water, cover and cook until brinjals are soft. Add tamarind juice and jaggery; cook for 2 minutes. Add 2–3 tsp prepared masala powder and mix well .4.
