Caramel Pecan Twists with Caramel Icing Pecan Twists: 1 cup finely chopped pecans 1/4 cup brown sugar 2 Tablespoons granulated sugar 1/2 teaspoon ground cinnamon 2 cans (8 ounces each)Pillsbury crescent dough sheets 4 Tablespoons butter, melted Caramel Icing: 1 stick butter 1 cup light brown sugar 1/4 cup heavy whipping cream 2 cups powdered sugar, sifted 1/4 teaspoon caramel emulsion, optional Heat oven to 375°. Prepare a cookie sheet with parchment paper. In a small bowl, combine the pecans, brown sugar, granulated sugar, and cinnamon. Set aside. Unroll both cans of crescent dough sheets and cut in half both horizontally and vertically creating four rectangles. Using both cans, you will end up with eight rectangles of dough. Brush each rectangle with some of the melted butter and sprinkle some of the pecan/sugar mixture over the butter. Repeat for each rectangle. Starting at the long side of the rectangle, roll up tightly. Pinch the edges to seal.  It may help to place the dough in the freezer for 5 to 10 minutes at this point. This can make the dough easier to work with in the next step. Take a sharp knife and cut each roll in half length-wise. This will give you two rope twists from each rectangle. Take the two pieces and twist them around each other. Place on the prepared cookie sheet. Repeat this process with the remaining rolls. Bake for 10 minutes or just until puffy and golden brown. DO NOT OVERBAKE. WATCH THE BOTTOMS CAREFULLY! Allow the pastries to cool while you prepare the icing. Icing: Melt the butter and brown sugar together on low heat. Bring to a boil for about two minutes. Be sure to stir constantly. Add the heavy whipping cream and heat just until boiling again. Remove from the heat. Mix in the caramel emulsion and stir well. Slowly add in the powdered sugar and stir until smooth. Spoon icing over the pecan twist pasteries. This icing will become firm quickly, so work fast. CONTACT INFORMATION: Come Sit At My Table P.O.
