SPG is one of the most basic rubs that is packed with flavour and compliments any cut of meat for the BBQ. We took this simple recipe and added a twist to it. Now you've seem it all, our creation was born so we had to name it. We decided on calling it SPG&J The Spicy Alternative. What makes this one unique is that the J stands for Jalapeno, so our SPG&J the spicy alternative not only enhance meat flavour as normal SPG does but it adds a hell of a kick to this traditional seasoning. We started by collecting some garlic chives and Jalapeno peppers cut them up and cranked our upright smoker to 140℉ opening the vents wide open and proceeded to dry both the garlic chives and the Jalapeno peppers for 12 hours. The result was phenomenal. We then used a coffee grinder to grind both of these ingredients into powder then proceeded to add salt, pepper and little more garlic powder to our garlic chives and Jalapeno powder thus our SPG&J was born. Super taste and super excited about this amazing SPG&J rub and yes now you've seen it all, SPG&J the spicy alternative RECIPE Ingredients • 2 tbs Kosher salt • 1 tbs black pepper • 1 tsp garlic powder • 1 tbs garlic chive powder (see below on how we made this ingredient) • 2 tbs Jalapeno powder (see below on how we made this ingredient) Directions • Collect several stems of garlic chive • Collect 6 Jalapeno peppers • Cut the garlic chive in half • Cut the Jalapeno peppers in half and remove the seeds • Slice the Jalapeno peppers lengthwise • Crank your upright smoker to 140℉ (we made the mistake of using a side smoker attachment to minimize the heat but quickly discovered that the there was not enough heat so we changed that to 140℉ with good results) • Add both prepared ingredients to the smoker on a fine screen • Dry for 12 hours with top vent wide open. • After 12 hours the herbs should be completely dry and the Jalapeno slices should snap easily in ½ • If by chance the Jalapeno peppers do not snap when bended continue drying them 1 hour at a time until they do • When everything is completely dry crush the Jalapeno using whatever method you want • Do the same with the garlic chives • Add each crushed ingredients to a coffee grinder one at a time • Grind into a somewhat fine powder • Grind the kosher salt using a coarser setting on your coffee grinder • In a bowl add the salt, pepper, garlic powder, garlic chives powder and Jalapeno pepper powder and mix really well.
