Bread is soaked in milk, mashed, and mixed with egg whites, vegetables, and spices. The mixture is divided into two portions, cooked in a pan, and topped with an egg yolk and mozzarella cheese on each portion. The result is a soft inside and golden outside breakfast patty that is easy to make and perfect for a quick meal. Try this simple one-pan breakfast recipe and enjoy a different style of bread and eggs. Ingredients: 3 bread slices, 150 ml milk, salt to taste, black pepper to taste, 2 eggs (separated), egg whites (added to bread mixture), 2 egg yolks (for topping), 1–2 tablespoons green onions (chopped), ½ carrot (grated), ¼ teaspoon chili flakes, mozzarella cheese (as needed for topping), oil for cooking. Method: Bread soaked in milk and mashed with a fork. Add salt and black pepper and mix. Separate eggs. Add egg whites into the bread mixture and mix well. Add chopped green onions and grated carrot, then mix again. Add chili flakes and mix evenly. Heat oil in the pan on medium heat for 30–45 seconds. Divide the mixture into two portions. Add one portion of the mixture and cook on medium heat for 2–3 minutes until golden and firm. Flip gently, reduce heat to low-medium, add one egg yolk on top, and sprinkle mozzarella cheese around it. Cover and cook for 2–3 minutes until egg yolk is set and cheese melts.
