The taste of this tagine will leave a smile on your face after each bite, thanks to the incredibly balanced flavors and lightness of its ingredients. The chicken is very tender and the sauce has a distinguished vibrant kick from the tomatoes and preserved lemons. You can replace the chicken with turkey, lamb, beef, or goat meat (like in Moroccan southern or berber regions). This tagine contains light seasoning with only two main spices (ground ginger and turmeric) and a rich fermented taste of preserved lemons (nowadays easily available in supermarkets and online stores). Keep in mind that we only use the pulp of the lemons in the cooking process and decorate at the end with the skin, since it can turn bitter if cooked. The word tagine refers to the traditional Moroccan clay pot with a cone-shaped lid used for slow cooking. However, nowadays, Moroccans use regular pots or pressure cookers to prepare every-day tagine recipes, like in this course. Traditionally, tagine is eaten communally within the warmth of friends and family. Moroccans prefer eating from the same plate, using the pieces of crusty bread, “Khobz” (though you could use sourdough, baguette, or any local crusty bread available) to scoop up the meat, vegetables and sauce. Yet, eating with a fork, or serving the tagine in individual plates is also an acceptable, rather modern, way of enjoying it. This tagine is simple to prepare and in this class, the Dada will show you a few tricks to perfect it and achieve its classic authentic taste. Ingredients 2 chicken thighs and 2 chicken breasts 1 teaspoon salt 1 teaspoon ground ginger 1 teaspoon ground coriander 1 heaping tablespoon paprika 1/2 teaspoon ground black pepper 1/2 teaspoon ground turmeric 3 garlic cloves 130ml (1/2 cup) water 1 small white onion 2 tablespoons olive oil A small handful of parsley 2 medium ripe tomatoes 600ml (2 1/2 cups) water 500g (1 lb) green beans 1/2 preserved lemon Steps Step 1: Cooking the chicken 1- Place the chicken in a large pot. 2- Season with salt, ginger, coriander, paprika, black pepper, and turmeric. 3- Peel the garlic and grate it into the pot with a grater or a garlic press. 4- Add the water and cover the pot. 5- Place the pot over medium low heat and cook for 3 minutes. 6- Flip the chicken and cook for 3 minutes on the other side. Step 2: Preparing the tagine 1- Peel the onion, wash it, then chop it into small cubes. 2- Add the onion and olive oil to the pot. 3- Cover the pot, then cook for 3 minutes 4- Finely chop the parsley and add half of it to the pot. Set the other half aside. 5- Stir to combine, then flip the chicken again. 6- Add the water, cover the pot, and continue cooking for 3 minutes. 7- Cut the tomatoes in half and deseed them. 8- Grate the tomatoes using the small holes of a grater. 9- Add the tomatoes to the pot, cover it, and continue cooking for 5 minutes. Step 3: Preparing the green beans 1- Trim the ends of the green beans and remove their strings. 2- Cut the green beans in half and place them in a bowl of water. 3- Add the 600ml (2 1/2 cups) of water to the pot making sure not to pour it directly on the chicken. 4- Drain the green beans and add them to the pot. 5- Add the remaining chopped parsley. 6- Chop the preserved lemon, remove the seeds, and add it to the pot. 7- Cover the pot, bring the heat to medium, then cook for 30 minutes or until the chicken and green beans are fully cooked.
