There are so many dishes you can make with eggplant, this is just one of them. This vegetable is one of my favorite, and in this dish it is the main ingredient. Eggplant is a substitute for Noodles for individuals that do not eat meat. This eggplant was sliced, grilled, and salted to combat it's bitterness. It is layered down in a Dutch oven dish and filled with ricotta cheese, spinach, basil and other ingredients. It is just perfect!!!! Don't hesitate, enjoy it..... Eggplant Lasagna 3 eggplant 1 ½ pound of ground meat 2 tbsp Hydrated Onion 2 tbsp Sazon goya 1 tbsp of Oregano Bunch of cilantro Shredded cheese(mozzarella) 1 small container of Ricotta cheese Bunch of Spinach Small bunch of purple basil Parmesan cheese First peel the Eggplant, place it in a container with water and Salt (salt stops the bitterness of the eggplant) In a heated skillet, add some butter Add the sliced eggplant, one at a time to obtain golden color in both sides Mixture Trim Basil Trim spinach And mix in a bowl with, hydrated onion, minced garlic, oregano and ricotta cheese Let’s layer the lasagna First add sauce on the bottom of the Casserole Add a layer of Eggplant, a layer of ground beef, a layer of the cheese mixture. Repeat action, Top with tomato sauce, Mozzarella shredded cheese and parmesan cheese.
