Try this easy-to-follow recipe for making your own Bruschetta! It is a delicious appetizer and addition to lunch or dinner. It is best with fresh, ripe tomatoes. Recipe Ingredients (adjust quantities to fit your needs) 2 cups fresh, ripe tomatoes (chopped in 1/4 to 1/2 inch pieces 1/4 cup organic, virgin olive oil 1 Tbsp. basil (fresh or dried) 1/2 tsp. chopped chives (if desired) 1/2 tsp. salt (adjust to taste) Parmesan cheese Grated cheese Crusty rolls, french loaf, english muffins, or any kind of roll you like, lightly toasted. Peel and cut up the tomatoes. Add olive oil, basil, salt, and chopped chives. Let mixture stand at room temperature for at least 1 hour. Preheat oven to broil. Toast small pieces of your bread/rolls. Place toasted bread on a cookie sheet which is covered with parchment paper. Spoon mixture on each piece of bread. Top with parmesan cheese and grated cheese. Place on bottom rack of oven. Watch closely until the cheese is hot and bubbly. Take out of oven and let sit for 1-2 minutes. Serve and enjoy! #bruschetta #appetizer #tomato #homemade
