Let me show you how I cook Niangao 年糕, the Rice Cake for Chinese New Year. I bought this one from a local grocery store as it was imported from Taiwan. First, I take out chunks from the container. Because they were not freshly made, it was dry and very hard to cut. Then, I cut them into thinner slices. In the mixing bowl, I put one egg, 2 tablespoons of flour, and beat the mixture. Add a quarter of a teaspoon of water and a quarter of a teaspoon of baking soda. Finally, I coat the slices with the mixture. In the frying pan, I put 1 tablespoon of oil. Test the oil for temperature. Then, put slices into hot oil. Cook them for 3 minutes and flip them halfway. Check for doneness and remove from heat. Now, ready to serve.
