PUMPKIN RAISIN MUFFINS Preheat Oven to 350 degrees F INGREDIENTS: 3 cups gluten free oats 1 - 15 ounce can pumpkin puree (not pie filling) 2 Tablespoons ground flax seeds 1 Tablespoon Pumpkin Pie Spice 2 VERY RIPE bananas 1/2 cup date paste (use the recipe on page 65 of UNPROCESSED for best results) 1 cup raisins 1/2 cup unsweetened almond milk In a large bowl, mix together dry ingredients (oats, flax, raisins and pumpkin pie spice). In a food processor fitted with the "S" blade, blend the bananas into a puree. Then add the canned pumpkin, date paste and almond milk and process again until batter is smooth. Pour into the dry ingredients and mix until fully incorporated. Divide evenly among 12 muffins in a silicone muffin pan. Bake for 45 minutes. If following the UWL program and dried fruit is a trigger for you, omit the raisins entirely and substitute another ripe banana or 1/2 cup unsweetened applesauce for the date paste.
