Strawberry Balsamic Chicken 2-4 chicken breasts seasoned with salt and pepper, browned on both sides, set aside in a baking dish. Top with 1.5 cups chopped strawberries. Balsamic glaze topping: 1 cup balsamic, 1/4 cup brown sugar, 1 Tbsp dijon mustard, salt and pepper to taste. Combine and bring to a boil. Add cornstarch slurry(1/4 cup water, 2 tsp cornstarch) to balsamic mixture, reduce heat and simmer until thickened, 5 minutes. Pour sauce over chicken and strawberries, bake at 375 for 15-20 minutes or until internal temp registers 165 degrees Fahrenheit. Quinoa Veggie Salad 1 cup cooked quinoa 1 cup chopped kale 4-6 medium beets, cooked, cooled, peeled, diced 1 small shallot, diced 1 medium cucumber, diced, 1/2 cup feta cheese 1/2 cup chopped pecans Honey Dijon Mustard Dressing: 4 Tbsp olive oil 3 Tbsp balsamic 2 Tbsp Honey 1.5 Tbsp Dijon Mustard Salt and Pepper to taste
