They're super chocolatey and soft , baked with a dollop of creamy cheesecake filling! This is how to make Double Chocolate Cheesecake Muffins: Double Chocolate Cheesecake Muffins Yield: 15 Muffins Ingredients: 40 g Butter/ 1.5 oz 80 g Semi-Sweet Chocolate/ 3.0 oz 200 g All-Purpose Flour/ 1 1/4 cups 150 g Sugar/ 1/2 cup 1 Tbsp Baking powder 2 Tbsp (15 g) unsweetened Cocoa Powder 1/4 tsp Salt 200 ml Milk/ 3/4 cup + 2 Tbsp 1 tsp Vanilla Extract 2 Eggs 100 g of Milk Chocolate Chips/ 1/2 cup Cheesecake Filling: 250g Cream Cheese/ 8.80 oz 2 Tbsp Sugar 1 Egg 1 tsp Corn Starch 2 tsp Vanilla Sugar Directions: 1. Preheat oven to 180°C/356°F. Line a 12-count muffin pan with cupcake liners. 2. In a small saucepan, melt chocolate and butter. Set aside. 3. In a large mixing bowl, add flour, sugar, baking powder, cocoa powder and salt. Give everything a quick mix. 4. Add milk, vanilla extract and eggs. Beat on medium high speed just until everything is well combined. 5. Add melted chocolate mixture. 6. Stir in chocolate chips. 7. Make Cheesecake mixture. In a medium mixing bowl, add in cream cheese, sugar, egg, corn starch and vanilla sugar. Beat on medium high speed just until everything comes together. 8. Scoop the Chocolate mixture into the prepared cupcake liners. 9. Add about 1 Tbsp of cheesecake filling into the center. 10.
