Keto Egg Free Walnut Rolls Recipe by Lectin Free Solutions [Janét Kniss] Keto Egg Free Walnut Rolls are here! This is another delicious Plant Paradox Keto Intensive and Keto/Flex compliant recipe. You have bread without high-carb flours or any eggs…and it’s delicious! With heart disease and the ApoE4 gene, my family likes to eat lots of walnuts for added vascular flexibility. The addition of psyllium and flax are also great benefits for a healthy gut and a healthy heart, according to Dr. Gundry. This recipe is the perfect solution for those of us that can’t eat eggs and would like to increase vascular flexibility by introducing more walnuts into your diet. If you haven’t found it yet I have also developed an Egg Free Almond Roll version and compliant Walnut Butter that my family enjoys [Links Below]. You will find these on Youtube “Lectin Free Solutions”. Ingredients: DRY: 2 c. Walnuts or Walnut Flour 2/3 c. Coconut Flour 1/2 c. Golden Flax Meal (I buy whole and grind them as I use them, storing in the freezer) 8 Tbls Ground Psyllium Husk Powder (you can use less 5-6 Tbls, but the texture will change) 4 tsp. Baking Powder 1 tsp. Salt Process all of these dry ingredients in your food processor until you have a finely ground mixture. If you are using walnut flour and you don’t have a food processor just mix all of the ingredients until thoroughly combined. WET: 1/2 c. Coconut Milk (full fat) 1/4 c. EVOO (extra virgin olive oil) 4 tsp. Apple Cider Vinegar 2 c. Boiling Water Pulse the coconut milk & EVOO into the dry mixture followed by slowly adding the 2 cups of boiling water. Form into 12-13 rolls and bake @ 350 for 45 minutes. Shut off the oven and let rest in the oven until completely cooled. Tips: Coconut flour is a slightly precarious product. Its absorption is not consistent so in any recipe where it’s used you may need to adjust your liquid up and down. This is why I like to add the boiling water slowly. If your dough seems too wet let it sit for 15 minutes in the food processor and it will usually absorb, if it doesn’t add 1 tsp more coconut flour or flax meal. On the flip side if the mixture is too dry pulse in 1Tbl at a time of extra boiling water. I have only had this happen once (with my original Walnut Roll Recipe) but just be advised that there is an easy solution. Storing: Store your rolls in the refrigerator or freeze them. These ingredients are expensive so best to freeze if you won’t eat them within a week.
