LECTIN FREE SOLUTIONS Janét Kniss It’s summer time and nothing makes me happier than to have a delicious Plant Paradox salad that I can make ahead in the morning and simply enjoy myself on the patio in the evening with no cooking to do. (you can also make this salad the day ahead and wait to put the dressing until you are ready to serve) This green papaya salad gives you an explosion of flavors with every bite! I can’t get enough of it. For those of you like (Dr. G) that don’t like cilantro just use mint and fennel, it will be just as delicious! If you want less resistant starch just reduce the amount of green papaya and add more carrots or cabbage. This doesn’t get easier for such a delicious make ahead family meal♥️ Salad Ingredients: 1 package of Sea Tangle kelp noodles (soak in juice of 1/2 lemon & salt or baking soda 1/2 tsp until soft, rinse & drain 20-30 minute…set aside (these noodles are not cooked) 1-1 1/2 lbs wild caught shrimp cut in 1/2 (down the middle) marinate in a bit of fish sauce and fermented garlic chili sauce (or fish sauce, garlic & Sriracha) for about 15 minutes. Stir fry and refrigerate. 1 small/medium green papaya - peel, remove seeds and inner membrane and grate 2 large carrots - grated 1/2 bunch cilantro - chopped 1 bunch mint - chopped 1 medium cucumber - peeled, seeds removed and dice 5 green onions - chopped Dressing Recipe: 1/3 c rice wine vinegar 1 lime juice 1-2 tbl garlic chili sauce (or use 3 cloves garlic & Sriacha) 1 TBl fish sauce 1-2 Tbls Allulose or Bocha Sweet 2 tsp grated ginger 3-4 TBL sesame oil (not toasted or EVOO) Mix all the ingredients and taste to make sure the flavors are balanced, adjust if needed. In 4 large bowls divide the kelp noodles on the bottom and add a small amount of dressing Toss all of the salad ingredients and pour the remainder of the dressing on the salad and toss to completely cover. Layer the salad on top of the kelp noodles. Then top with the shrimp that you have chilling in the refrigerator. You can serve immediately or you can cover, refrigerate and wait a few hours. This is one of those recipes that you can easily substitute any ingredient you don’t have or don’t like. The key ingredient is the green papaya, but I have made a similar salad using very finely shredded cabbage. It doesn’t taste the same, but the point is it works!
