Janét Kniss – Lectin Free Solutions Egg Free Coffee Cake Muffins … Who doesn’t love a nice moist crumb top coffee cake with a cuppa coffee? I like to make this recipe as muffins so the individual servings are a nice presentation and it keeps me from eating more than one! This is a quick low carb recipe that I think you’ll really like. There are tons of variations that you can do with this recipe. You can add nuts to the batter along with more cinnamon or blueberries, orange zest & cardamom in the batter and the crumble is also nice, sugar free chocolate chips are always a winner, just use your imagination or keep it simple like I have. I made the recipe as an egg free muffin, but it’s easy to make it with eggs, just look under options at the end of the recipe. Recipe/Ingredients: Makes 8 Large Muffins Dry Ingredients: whisk together in a bowl 1 cup Coconut Flour 1/2 cup Non GMO Allulose (or compliant sweetener of your choice) I like 1/2 Allulose & 1/2 Bocha Sweet 3 TBLS Bob’s Red Mill Egg Replacer (powder) 1/2 tsp. Xanthan powder 1 TBL Baking Powder Wet Ingredients: whisk all ingredients together and fold into dry ingredients 1 1/4 cups coconut milk 1/3 cup extra virgin olive oil (or avocado oil) 1 tsp vanilla 6 Tbls water Crumble Top: ¼ cup cassava flour ¼ cup non gmo allulose or Bocha Sweet 2 TBl EVOO or avocado oil Mix together to form crumble Add: 3 Tbls chopped walnuts 2 Tbls shredded coconut Yield: 8 large muffins You will need: A muffin tin that will hold 8 muffin papers (these don’t release easily so use muffin paper liners) Fill the cups evenly with batter Press the Crumple into the batter (lightly) Bake 10 minutes @ 350 Reduce heat to 300 and bake for an additional 20-25 minutes or until toothpick comes out clean Place on a cooling rack until completely cooled.
