Cornbread muffins ½ cup yellow corn meal ½ cup white corn meal 1 cup flour ¼ sugar 2 tsp baking powder ½ tsp salt 1 egg, beaten ¼ cup melted butter 1 cup buttermilk ¼ cup honey Process Heat your oven to 400F/200C. Prepare a muffin tin by spraying with non-stick, or rubbing with some butter. In a large bowl, sift the flour and baking powder. Mix in the rest of the dry ingredients. In a second bowl, mix together the wet ingredients. Combine the wet into the dry, mixing just until the batter comes together. Divide into the prepared muffin tin. Bake 15-20 minutes, or until done.
