This is a baking video showing the steps to making Hazelnut and Dark Chocolate Muffins. Simple and easy muffins that are not too sweet but delicious. (If you want to make them sweeter - see comments in the Tips below) Ingredients 150g unsalted butter, softened 150g caster sugar 3 eggs 1t baking powder pinch of salt 150g plain flour 200g dark chocolate 110g hazelnuts, halved Method Preheat oven to 170C Line a 12 hole muffin tin with patty pans - set aside Add butter and sugar - cream together Add eggs - mix to combine Add baking powder, salt, plain flour and mix to combine Add hazelnuts and dark chocolate to the batter Mix until combined Spoon into each patty pan Bake in oven for 20-25 minutes Cool in tin for 5 minutes Take out of tin and let muffins cool completely on a wire rack. TIPS This recipe is delicious and not too sweet. If you prefer more sweetness - add the 150g chopped dates and 1t grated orange zest This recipe can also be made into a loaf Line a loaf tin (10 x 20cm) with baking paper Add 150g chopped dates and 1t grated orange zest when adding the hazelnuts and dark chocolate (see my Pear Pistachio and White Chocolate Loaf video as an example) You can use this method to make Pear, Pistachio and White Chocolate muffins, substituting the hazelnuts and dark chocolate with 150g diced pear, 110g pistachios, 200g white chocolate and 65g craisins Recipe from the amazing Tracey and Anthony Cotterell @ Matters of Taste Follow me on @BakingChannel68 Stay tuned for future step by step baking videos.
