In this video I take you along with me and show you what all I eat throughout my day as a vegan who eats mostly whole food plant based! Breakfast: Oil Free, Vegan Biscuits and Tofu "sausage" gravy Oil Free Lemon Berry Scones Watermelon, pineapple and ginger juice Lunch: Cucumber Sandwich Lemony Dill Chickpea Soup: https://rainbowplantlife.com/lemony-c... Snack: Homemade Granola Bars Recipe | 16 bars Dry 1.5-2 cups old fashioned oats 1/2 cereal 2 tbsp chia seeds 1/2 pumpkin seeds 1/2 cup nuts of choice 1/2 cup dried berries/raisins 1/2 cup chocolate chips Cinnamon to taste and pinch of salt Wet 1/2 cup medjool dates 1/2 cup nut butter 1/2 cup maple syrup Vanilla extract 1. Combine all of the dry ingredients in a food processor except the raisins and choc chips, pulse on low a few times then pour in a large mixing bowl 2. Next pulse the dates into a paste in food processor, leave in there 3. Then add the maple syrup, vanilla and nut butter to a small sauce pan, stir until warm and smooth 4. Pour the nut butter mix over the date paste and continue to combine until nice and smooth 5. Pour the wet mix over the dry ingredients stir until well combined, add in the dry berries and chocolate chips, mix until thick and sticky 6. Spread into a square pan and press down hard and make it even 7. Freeze for 1 hour 8. Remove and slice into rectangles, store in fridge for a week, enjoy!
