For Dough - 2 cups/250g - Wholewheat Flour 1/2 cup/100g - Cold Butter 1/2 tsp - Salt 1/4 tsp - Baking Powder 2 pinch - Asafetida/Hing 1/3-1/2 cup - Water Masala For Stuffing - 1 tbsp Coriander seeds 1 tbsp Cumin seeds 1 tsp Black pepper 3-4 Whole red chillies based on your preference 1 Cardamom pod 2 Cloves 1 small piece Cinnamon Stuffing - 3/4 cup 90g Sattu (roasted chickpea flour) The freshly ground masala 1/2 tsp Salt 1-2 tbsp Jaggery 2-3 tbsp Mustard oil Juice of 1 Lime or 1 tsp Amchur This no deep fry kachori is perfect for festivals, tea-time gatherings, or when you want to serve something special to guests. The dough is made with whole wheat flour and cold butter for flaky layers, while the stuffing uses roasted chickpea flour (sattu) mixed with freshly ground spices, mustard oil, jaggery, and lime juice for that spicy, tangy, savoury and slightly sweet taste.
