Be sure to check out Kroger.com to get started on your holiday cooking https://bit.ly/3lqaIxv Ingredients: (For the Brioche buns) [tanzong] -60g Warm Milk -20g Private selection Flour -10g H2O (Rest of bread ingredients) -150g warm Kroger milk -15g yeast -65g private selection Honey -400g private selection flour -4g salt -170g soft private selection butter -2 kroger egg yolks -2 whole Kroger eggs (Egg wash) -1 yolk -1 tbsp Kroger cream Cook tanzong in pan til comes together, In mixing bowl whisk milk, yeast honey and let bloom Add in rest of ingredients including the tonzong then mix together with the hook while adding in butter slowly at a time mix on high for about 10 minutes Put dough into a separate bowl cover with plastic wrap or a towel proof for about 30 minutes to an hour until it doubles in size Once it doubles in size toss it into the fridge for about 30 minutes or overnight if preferred to do the next day Preheat oven to 400°F Form doughballs as described in video Brush with egg wash set onto a parchment paper lined sheet tray Bake off at 400°F for 8 minutes Drop to 350°F and bake til deep golden about 15 minutes. Cool and keep covered once cooled (For the Stuffing Dredge) -1 quart Flour -1 1/2 cups corn starch -4 tablespoons onion powder -4 tablespoons celery seed -2 tablespoons black pepper -2 tablespoons kosher salt -mix all ingredients and use whenever wanted. May be stored in container (For the tenders) -1-2 lbs turkey breast and tenders -1 quart butter milk -dredge -herb mix (1/4 cup thyme,1/4 cup rosemary,1/4 cup sage) Marinade turkey in butter milk overnight Coat in stuffing dredge Fry in canola oil at 325°F until golden brown delicious and 165°F internal temp. Immediately after frying toss in a bowl with chopped herbs and salt to taste Thanks so much for watching!
