I bring you to a Michelin one-star Chinese Sichuan restaurant in Chengdu, China, called Fu Rong Huang (芙蓉凰). It's an old-school restaurant and is said to be the cheapest and most frugal Michelin restaurant ever. This restaurant serves traditional Sichuan dishes including many that are not usually seen in other restaurants. We were presented with a variety of dishes to represent the diversity of Sichuan cuisine and to showcase many unique flavor profiles that debunk the stereotype that Sichuan cuisine is only spicy. Food we had You Men Si Bao (油焖四宝) Four treasure confit Jiao Ma E Zhen (椒麻鹅胗) Gooze gizzard with green chili and Sichuan peppercorn This despite its name might sound spicy, this is not really a spicy dish, what you get is really more of a spicy-numbing sensation from the Sichuan pepper and the peppery aroma from the green chili. Guo Ba Rou Pian (锅巴肉片) This is a very iconic old-school dish that's not often seen nowadays. It consists of crispy rice cracker (Guoba) topped with a freshly cooked mixture of pork slices, wood ear, wood ears and other condiments. The flavor profile is called big lychee, which is sweet, sour, and umami. This is the classical preparation. Hui Guo Shao Bai (回锅烧白) A signature of this restaurant aka double cooked Shao Bai, it's a spin from the classic Tian Shao Bai (sweet pork topped on rice). The rice part is "second cooked" by going into the wok to stir fry. To see the classic Shao Bai, check out: • Michelin One Star, The Most Popular S... Xue Hua Ji Nao (雪花鸡淖) Snowflake chicken mousse, this is a classic high end Sichuan dish that's not often seen, it's similar to the previously covered Ji Dou Hua (鸡豆花 lit. Chicken tender tofu) but instead of pouched in stock and served in consommé, this one is mixed with eggwhite and shallow fried in wok. Hai Wei Mian (海味面) Ocean-flavored noodles, this is a classic Chengdu noodle snack, this dish/noodle uses a mixture of rehydrated goods and a stock made with chicken and pork bones under high heat, this is the essence of umami. Dan Dan Mian (担担面) Another classic Chengdu noodle snack served in a small bow with a chili oil based mixture and topped with crispy pork. Zhong Shui Jiao (钟水饺) Another classic Chengdu dumpling snack, pork dumplings in a chili oil-based mixture with the addition of garlic, soy sauce, and sugar Liang Fen (凉粉) Yet another classic Chengdu snack made with mung bean jelly noodle. Shui Zhu Shan Yu (水煮鳝鱼) Water-poached rice paddy eel. The is the only spicy dish on the table, it's the Shui Zhu category (水煮 lit water poach) which is made by frying chili, spices, and other aromatics, adding water into a soup base, and then poaching whatever ingredients in the soup base. Before serving the dish is topped with additional chili, garlic and other aromatics then showered with piping hot oil.
