In today’s video, we’re making Gajar ka Halwa Gajar ka Halwa made the traditional way 🥕✨ Slow-cooked carrots with full-fat milk, ghee, khoya, and a hint of cardamom and saffron 💛 Rich, soft, and perfectly balanced in sweetness, finished with almonds and pistachios 🥜 A comforting classic that tastes just like home 🤍 Ingredients : Carrots (grated) – 1.5 kg Ghee – ½ cup (for initial cooking) Full-fat milk – 2 litres Saffron strands – a pinch Warm milk (for saffron) – ½ cup Cardamom powder – 2 teaspoons Condensed milk – ¾ cup Sugar – ½ cup (adjust to taste) Ghee – 2 tablespoons (later stage) Ghee – 4 tablespoons (for khoya) Khoya / Mawa – ½ kg Almonds (chopped) – as required Pistachios (chopped) – as required Instructions: 1. Prepare the carrotsWash, peel, and grate 1.5 kg carrots finely. 2. Initial cookingHeat ½ cup ghee in a heavy-bottom pan (kadhai).Add the grated carrots and cook on high flame for 2–3 minutes, stirring continuously. Unit water drys. 3. Add milkPour in 2 litres full-fat milk and mix well.Cook on medium flame, stirring occasionally, so the mixture does not stick to the pan. 4. Cook till milk reducesLet the carrots cook until the milk completely reduces, thickens, and changes colour.This step takes time—be patient and keep stirring in between. 5. Add saffron milkSoak a pinch of saffron in ½ cup warm milk.Add this saffron milk to the halwa and mix well. 6. FlavouringAdd 2 teaspoons cardamom powder and mix nicely. 7. Add condensed milkAdd ¾ cup condensed milk and cook for 5 minutes, stirring continuously. 8. Add ghee and nutsAdd 2 tablespoons ghee, followed by chopped almonds and pistachios.Mix well so the nuts are evenly distributed. 9. Add sugarAdd ½ cup sugar and mix until the sugar completely dissolves and blends into the halwa. 10. Prepare khoya mixtureIn a separate pan, heat 4 tablespoons ghee.Add ½ kg khoya (mawa) and cook on low flame until it becomes soft and smooth. 11. Combine khoya with halwaAdd the prepared khoya to the carrot mixture.Mix everything thoroughly and cook for a few more minutes until well combined. 12.
