List of Ingredients (2 people) Olive oil 1 finely chopped onion 160g cubed pancetta (or bacon, smoked or unsmoked) 200g frozen or fresh petit pois (peas) Salt, to taste 220g Short pasta (ditalini, macaroni, fusilli, or farfalle) Fresh mint leaves 60g Parmesan cheese Freshly ground black pepper Cooking Instructions Prepare the Base: Heat olive oil in a pan and add the finely chopped onion. Sizzle the onions for a couple of minutes until they soften. Cook Pancetta and Peas: Add the cubed pancetta (or bacon) to the pan and cook until it begins to release its fat. Then, add the peas and let them sizzle together for a couple of minutes. Simmer with Water: Add a couple of ladles of hot boiling water to the pan, followed by a pinch of salt. Stir well and let it simmer with the lid on for 10-15 minutes, depending on the tenderness of the peas. Cook the Pasta: Add your chosen short pasta to the pan and stir well. Gradually add hot boiling water, a little at a time, to maintain a creamy consistency. Cook the pasta for about 10 minutes. Final Touches: Add a few fresh mint leaves in the last couple of minutes of cooking to release their flavor. Once the pasta is cooked, stir in some Parmesan cheese and season with freshly ground black pepper.
