Bhindi Paneer: Ingredients: Lady fingers 1 cup Cottage cheese cubes ½ cup Oil ¼ cup Ginger paste 1 tsp Garlic paste 1 tsp Onion julienne d half Capsicum julienned half Curry leaves 6 to 8 Fenugreek 1 tsp Mustard 1 tsp Yogurt 1 cup Salt as required Red chili whole 6 to 8 Cumin 1 tsp Cream ½ cup Red chili powder 1 tsp Turmeric powder ½ tsp Cardamom powder ¼ tsp Fresh coriander as required Green chili julienned as required METHOD Karahi men oil dal ker garam Karen or phir methi, rai, sabit lal mirch or curry patta dal ker fry ker len ab lehsan or adrak ka paste dal ker bhoon len phir piyaz, shimla or dahi dal ker bhoon len ab tamam masalay dal ker achi tarhan bhoon len phir bhindi, paneer or cream dal ker itna pakaen kay masala or oil alag alag hojae. Phir mirchen or dhaniya dal ker serve Karen. Katakat: Ingredients: Mutton brain chopped 1 cup Mutton kidney chopped 1 cup Mutton chops 4 to 6 Oil ½ cup Ginger paste 2 tbsp Garlic paste 2 tbsp Green chili paste 1 tbsp Salt as required Red chili crushed 1 tbsp Cumin roasted 1 tbsp Whole coriander roasted 1 tbsp Dried fenugreek 1 tsp Garam masala powder 1 tsp Turmeric powder ½ tsp Tomato chopped 1 cup Yogurt 1 cup Green chili chopped 1 tbsp Fresh coriander chopped 1 tbsp Butter ¼ cup Ginger julienne as required METHOD Mutton kidney ko pani se achir tarhan dhoker lehsan, adrak kay paste or haldi kay sath ubal len takay mutton ki smell khatam hojae. Phir brain or chop ko bhi isi tarhan dhoker alag alag ubal len. Ab taway per oil dal ker lehsan or adrak ka paste dal ker kidney, or chops dal ker fry ker len ab dahi, tomato or tamam masalay dal ker dhanp den jam masala kushk honay lagay to brain dal ker slicer ki madad se kat-a-kat koot len phir akhir men brain, hara dhaniya, mirchen or butter dal ker itna kakaen kay oil or masala alag alag hojae. Zafrani Walnut Bites: Ingredients: Egg 6 Sugar ½ cup Clarified butter ½ cup Milk powder ½ cup Walnuts ¼ cup Saffron essence few drops METHOD Clarified butter ko garam ker kay thanda ker len.
