Sophia Marshall-Pelayo is a Junior Biology, Spanish major in the Randall Research Scholars Program (RRSP). Their research project presentation, "Biopolymer-stabilized lutein emulsions and their electrospray drying.," was completed under the advisement of Lingyan Kong from the Department of Human Nutrition, Hospitality, and Sports Management. Project Description: Lutein, a carotenoid found in leafy vegetables, acts as a blue light filter and guards the macula, the light-sensitive tissue in the eye, against oxidative damage caused by light. Newborns are more vulnerable to blue light than adults, therefore have a high need for lutein, which has been shown to inhibit the progression of retinopathy of prematurity in preterm infants. The purpose of this project is to find the most stable lutein emulsions and eventually, make electrospun nanofibers for enhanced lutein delivery.
