Note: Untuk menggelakkan jeneket menjadi berminyak, pastikan bila doh dah naik terus digoreng dalam minyak yang senantiasa panas. Kalau tidak jeneket akan menjadi berminyak. Kurangkan air jika perlu, dough jenekat jangan terlalu lembik, kalau tidak jenekat akan jadi berminyak. Important Tip: FYI bila letak tanzhong, jeneket tetap akan tetap lembut walaupun setelah disimpan dlm fridge. JENEKET RECIPE: WHEAT FLOUR – 3 CUPS GRANULATED SUGAR – 7 ½ TABLESPOON (If you prefer sweeter, add more sugar) SALT– 1 ½ TEASPOON BAKING POWDER – 1 TEASPOON BICARBONATE OF SODA – ½ TEASPOON YEAST – 1 TEASPOON TANGZHONG – 2 TABLESPOON EGG – 1 EGG CONDENSED MILK – 6 TABLESPOON (If you prefer sweeter, add more condensed milk) WATER – 1 1/3 CUPS (Reduce water if required) COOKING OIL FOR FRYING Tangzhong Recipe (Substitute for Bread Improver): • Resipi Tangzhong (Substitute for Brea... Note: To avoid the jeneket from becoming oil, ensure when the dough has risen, immediately fry in very hot cooking oil. Otherwise the jeneket will absorb oil & become oily. Jenekat dough cannot be too soft, reduce the amount of water where necessary to avoid the jenekat becoming oily. Important Tip: FYI when you add tanzhong, the jeneket will remain soft even after keeping it in the fridge. But please ensure that you follow the method or technique on how to reheat the jeneket using air fryer. After keeping in the fridge, to softenen back the jeneket, please ensure that the air fryer temperature is only 80 or 90 degrees. Heat it until the jeneket becomes soft again.
