It is the kind of food that feels light yet comforting, with the softness of the filling inside and a golden, crisp pastry on the outside. This is a very forgiving recipe. The pastry is delicate, but once you layer it and work slowly, you can shape it into beautiful spirals or keep it long like a rustic loaf. Both options work well. The spirals look like little rosettes, and the long version slices beautifully, revealing the creamy centre and the sunflower seeds on top. I hope you enjoy cooking this as much as I did. Ingredients For the pastry base 3 sheets of phyllo pastry per spiral or per long roll Olive oil for brushing 1 egg for the egg wash Sunflower seeds for topping For the filling Fresh tomatoes, thinly sliced Grated mozzarella Ricotta Spinach, cooked and squeezed dry Fresh mushrooms, very thinly sliced Ham Seasoning Oregano Salt Black pepper Cooking Method Lay down the first sheet of phyllo pastry and brush it lightly with olive oil. Add the second sheet, brush again, then add the third. This gives strength and helps avoid tearing. Add your filling. Start with tomatoes and mozzarella, then add ricotta, spinach, mushrooms, and ham. Keep the filling thin and leave a border along the edges. Season with a little olive oil, oregano, salt, and pepper. Roll the pastry gently from the long side, keeping the movement slow so the layers stay together. Shape your pastry: Option A: Coil it into a spiral. Option B: Keep it long, like a rustic loaf, and place it straight on the tray. Prepare a baking tray with baking paper and a little olive oil. Transfer your pastry carefully. Brush the top with egg wash. Add sunflower seeds. Bake at 180°C fan or 200°C conventional for about 20 minutes. Check at 10 and 15 minutes and continue until golden and crisp.
