INGREDIENTS Two eggplants Two chicken breasts sliced thinly Two eggs Eight dessert spoons dried breadcrumbs Grana Padano or Parmigiano or Pecorino Cheddar Mozzarella Parsley fresh, frozen or dried Salt Pepper Olive oil for frying Ham optional COOKING INSTRUCTIONS Preheat the oven to 180 degrees fan or 200 degrees conventional. Slice the eggplants into thick pieces so that they keep their structure and roast them on a tray without oil or salt for about twenty minutes. Prepare the breadcrumb mix with dried breadcrumbs, Grana, cheddar, parsley, salt, and pepper. Beat two eggs in a separate bowl. Slice the chicken breasts horizontally and coat them first in the egg and then in the breadcrumb mixture. Fry the chicken gently in olive oil until golden on both sides and place on kitchen paper to rest. Dip the roasted eggplant slices lightly in egg and breadcrumbs and arrange them on a tray.
