How to smoke a Pizza. I'm glad I was finally able to make a Video on this Mexican Pizza. Since I'm a Pizza Lover it made perfect sense. Not to mention I'm getting a nice Pizza Playlist together that is really worth checking out if you're interested. This Mexican Pizza starts out with an Enchilada and Chipotle Pepper Sauce. Then we follow that up with a Southwestern style Seasoning that we add into some Pork Sausage. Once we mix that Seasoning into the Sausage it goes on the Drum Smoker at 275 ° and smokes for just over 1-1/2 hours. We pull the Sausage off the Drum and put the Smoker into Pizza Oven mode. This is done by adding a Pizza Stone and opening the bottom Damper all the way. Let that heat up for 30 minutes and its ready for a Pizza. On top of our homemade Crust, we add the Sauce, Onion, Green Chili's, Refried Beans, our Smoked Sausage, Mozzarella Cheese and Black Olives. Smoked in the Drum Smoker a total of 29 minutes rotating frequently and adding Honey to the Crust Edge. Pull the Pizza off the Smoker and add Fresh Tomato's, crumbled Queso Fresco, Cilantro and Mexican Crema. Enjoy! #smokedpizza ,#mexicanpizza ,#bbq ,#heatofthedrum ,#drumsmoker Pizza Crust Recipe: 1-1/2 C warm water 1 tsp Granulated Sugar 2-1/4 tsp Active Dry Yeast 2 Tbls Virgin Olive Oil 3-1/2 C all Purpose Flour (Dough) 1/2 C all Purpose Flour (For Kneading) 2 tsp Salt 2 Tbls Corn Meal Place Water, Sugar, and Yeast in a large Bowl, whisk together. Let rest for 5 minutes or until foamy. Add Olive Oil and 1 cup of Flour whisking until well blended. Stir in Salt. With a Spatula add remaining Flour a little at a time until a soft Dough forms. Place Dough on a lightly Floured surface and knead for 5 to 6 minutes. Coat your empty Bowl with Olive Oil and place the Dough inside rolling around to coat all sides. Cover with Saran Wrap and a Towel and place on Stovetop. Leave Hood Light on for extra heat. Leave for 1 Hour. Roll out Dough on a lightly Floured Surface. Utilize remaining 1/2 cup of flour as needed. Add Parchment Paper to a 16" Pizza Pan, top with Corn Meal and place Dough on top. Add remaining Corn Meal to top of Pizza Stone.
