Make very easy and delicious eggplant chips at home By Zahra Ansari Eggplant chips are a delicious and healthy snack or appetizer that is easy to make at home. They are made by slicing eggplant thinly, coating them in a mixture of flour, spices, and oil, and then baking or frying them until crispy. *Ingredients:* 1 medium eggplant 1/2 cup all-purpose flour 1/4 teaspoon salt 1/4 teaspoon black pepper 1/4 teaspoon garlic powder 1/4 teaspoon paprika 1/4 cup olive oil [Image of medium eggplant] [Image of all-purpose flour] *Instructions:* 1. Preheat oven to 400 degrees F (200 degrees C). 2. Slice the eggplant thinly into rounds. 3. In a shallow bowl, whisk together the flour, salt, pepper, garlic powder, and paprika. 4. In another shallow bowl, whisk together the olive oil. 5. Dip each eggplant slice in the flour mixture, then coat in the olive oil. 6. Place the eggplant slices in a single layer on a baking sheet. 7. Bake for 20-25 minutes, or until the eggplant chips are golden brown and crispy. *Tips:* For a spicier chip, add a pinch of cayenne pepper to the flour mixture. For a more flavorful chip, add a tablespoon of grated Parmesan cheese to the flour mixture.
