In this recipe we show you the best way to make a dough for the "kathi" roll that yields a flaky yet soft paratha for the roll. We also give you a couple of variations on the filling. Although the term kathi roll is indiscriminately used now for all edibles that have a wrap and a filling, it is not accurate. A kathi roll has a fried, flaky, paratha wrap, and a filling of meat skewered on a kathi (or stick). The egg roll, however delicious, doesn't have a filling cooked on a kathi. So, it is not a kathi roll.
