While the meat is cooking, whisk together 12 eggs in a large bowl. Place greens at the bottom of each muffin cup. Pour eggs on top of the spinach, filling the cup 2/3 of the way up – they will rise. With a spoon, add a little cooked meat into each muffin cup. Bake in the oven for 25 minutes.
