Lamb Kleftiko - Slow Roasted lamb Perfection 🇬🇷 Tender, juicy lamb cooked in a sealed parcel with potatoes, garlic, lemon, and herbs — this is one of Greece’s most iconic dishes. In this video, I’ll show you how to make an authentic Lamb Kleftiko the traditional way, just like you’d get in a Greek village taverna. FULL RECIPE: 📍 Prep time: 15 mins ⏱️ Cook time: 3 hours 🍽️ Serves: 4 ⸻ Ingredients: • 1.5–2 kg bone-in lamb shoulder or leg, cut into large chunks • 4 large garlic cloves, sliced • 1 large onion, sliced • 4–5 medium potatoes, peeled & quartered • 2 tomatoes, sliced • Juice of 1 large lemon • 3 tbsp olive oil • 1 tbsp dried oregano • 1 tsp paprika • Salt & pepper, to taste • Fresh thyme, rosemary and bay leaves • Baking paper & foil ⸻ Instructions: 1. Marinate the Lamb In a large bowl, toss the lamb with garlic, lemon juice, olive oil, oregano, paprika, salt, and pepper. Cover and marinate for at least 1 hour (preferably overnight in the fridge). 2. Prep Your Parcel Preheat oven to 160°C (fan) / 180°C (conventional). On a large sheet of baking paper (with foil underneath), layer the sliced onions, potatoes, peppers, and tomatoes. Place the marinated lamb on top. 3. Wrap It Up Wrap the baking paper and foil tightly around everything to form a sealed parcel (like a gift). Place in a deep baking tray. 4. Bake Low and Slow Roast for 3 hours until the lamb is fall-apart tender and the potatoes are infused with all the flavourful juices. 5. Unwrap and Crisp (Optional) Open the parcel for the last 10 minutes of cooking if you want to brown the top slightly under the grill. 6. Serve Plate up with crusty bread, lemon wedges, and a drizzle of the cooking juices.
