Try this crispy, stuffed snack recipe from my Indian Snacks series. Share it with your friends and family if Aloo Samosa Ingredients 🧈 For Dough (Patti / Cover) Maida – 1 kg Ajwain – 2 tsp Namak – 2 tsp (ya taste ke mutabiq) Oil / Ghee – 200 ml (moyan ke liye) Pani – zarurat ke mutabiq (hard dough ke liye) 🥔 For Filling (Masala) Aloo (boiled) – 2 kg Hari matar – 500 g Hari mirch – 4–5 (barik kati hui) Adrak – 2 tbsp (barik kata) Jeera – 2 tbsp Dhaniya powder – 3 tbsp Lal mirch powder – 2 tbsp Garam masala – 1 tbsp Amchur powder – 1 tbsp Hara dhaniya – 1 bunch Namak – taste ke mutabiq Oil – 150 ml (masala bhunne ke liye) 🍳 Frying Oil – deep frying ke liye (approx 3–4 liter) For Filling ● Heat oil in a pan, ginger, fennel seeds, crushed coriander and cumin seeds. Cook till fragrant. ● Add carom seeds and mix well. Chop the potatoes and add in, mix and cook for 4-5 minutes. ● Add black pepper powder, enough for taste and colour both. ● Add salt and mix well. Add dried mango powder in the end and mix well. ● Allow to cool down. For Samosa ● Divide the prepared dough in equal portions, and roll it in an oval and long shape. ● Divide the rolled dough sheet into two halves, shape it into a triangle forming a cone. ● Fill the dough cone with the prepared potato filling and seal the edges by overlapping them. ● Deep fry the prepared samosas in medium hot oil till golden brown and crispy. ● Drain on absorbent paper and serve hot with choice of chutney
