Puree the garlic, candlenuts, coriander, cumin, terasi, and oil in a blender then add the turmeric, ginger, galangal, lemongrass, red chilies, shallots, and cayenne pepper, puree again 2. Heat a frying pan, saute the spices until fragrant then add the nutmeg, cloves, orange, and bay leaves, cook until done then set aside 2-3 tablespoons of spices 3. Add chicken, water, salt, pepper, powdered broth, and brown sugar, cook until tender for 90-120 minutes 4. For long beans bejek, heat a frying pan, add the remaining ground spices then add the long beans and water 5. Add salt, pepper, and powdered broth, cook until the water reduces slightly then add the coconut milk, stir well 6. For sambal matah, mix shallots, red cayenne pepper, and lime juice then add salt, sugar, and powdered broth 7. Add the burnt shrimp paste, crush then add hot oil, stir well 8. For terasi sambal, heat the oil, add the red chilies, shallots, and cayenne pepper, cook until slightly wilted then add the tomatoes 9. Transfer to a food processor, then puree 10.
