4 - 5 cups, Lentils, Cooked 45ml Extra Virgin Olive Oil 2 Garlic Cloves, Whole 1 Fresh Red Chilli Pepper, Chopped 1/2 Bunch Fresh Parsley, Chopped 1 Cup Cherry Tomatoes 4 Italian Style Sausages, cut into pieces 750ml Passata, tomato puree 1 Slice Pane Biscotto, Toasted Italian Bread In a large pot on high heat add olive oil, garlic, red chili pepper, sausages, cherry tomatoes, and parsley. Brown the sausages and then add the the lentils. Cook all together for a few minutes then at the passata. Add salt and let cook for 40 minutes on medium high heat. The lentils will thicken up and become like a hearty stew. Serve the lentils and sausages over some pane biscotto or Italian toasted bread and finish with a drizzle of extra virgin olive oil.
