Join me at home in England for some calm and quiet moments at the start of December. This week I'm making mince pies just like my mum always used to when I was a child, doing a test run on a veggie wellington (vegetable pie) to cook for my dad when he comes to stay for Christmas, and foraging for and making a traditional evergreen wreath. I also share an update on my denim log cabin quilt which I've been working on slowly in my videos in recent months. As a warning in case it's too raw for you, I talk about grief in this episode of my vlog, particularly dementia grief, which is one of the reasons why I've found it really hard to celebrate Christmas in recent years. These days I tend to focus on the solstice, and my traditions look much more like ancient Yuletide celebrations than modern Christmas. They're nature based, quiet, and fairly low key, but it's the kind of Christmastime that brings me peace and makes me happy and I'm sharing how I do things in case you're similar to me, and also enjoy a homemade, simple kind of Christmas. If you're new to my channel, hello, and welcome. My name is Stéphanie, I live in England, and this is my slow living vlog. The term 'slow living' makes me roll my eyes. I'm every bit the cynical Brit when it comes to trends and buzzwords, and anything that sounds like a marketing ploy or fad make me recoil. That said, slow living isn't a fad. It's just a new(ish) phrase to describe old fashioned ways of being, and a life that's in touch with the passing seasons. I have far too many hobbies. I love cooking and baking from scratch, and because I'm vegan all of the recipes I make and share are vegetarian and vegan friendly too. I love to garden, and grow food and flowers on a plot of land my husband and I rent down at the local community gardens. Our plot predates us moving to our current home, where we are now lucky enough to have a back garden too. We lived in flats for a very long time, and that plot was (and remains) an absolute lifeline. I love to create and to make things with my hands. Fibre art and textiles are my main passions, but I dabble in lots of things. Sewing, quilting, weaving, soap making, felting with recycled and waste fibres, and all sorts of other crafts and projects. I document my makes in real time, and each episode of my vlog is filled with seasonal recipes, stories from my kitchen and garden, and the crafts I work on as the seasons move around. For my low sugar vegan mincemeat I like to include the following: Apples and pears. Use sweet varieties so that you don't have to add much additional sugar. I like to use Braeburns, Royal Galas, and small pears. Currants or mixed dried fruit Cinnamon, ground ginger, nutmeg Juice of one large orange Black treacle or molasses 1tsp tapioca flour, to thicken, this is in place of the traditional suet. Chop your fruit, add your dried fruit, fruit juice, treacle and spices, let it cook down for a bit, then once the mix is bubbling stir through the tapioca flour. It needs heat to gel and activate. Let the mixture set overnight, it firms up as it cools. For shortcrust pastry I use 1 part fat to 2 parts all purpose (plain) flour, and then add cold water very slowly until the fat and flour come together to create a firm but flexible ball of pastry dough. Chill before rolling.
