Join me for a slow and peaceful autumn week at home as I cook and bake with our home-grown harvests. This week I'm making an apple pie, apple scrap vinegar and a vegetable pizza from scratch, including the dough and the cheese! I have also been spending some time trying my hand at visible mending by repairing a hole in my oven gloves. If you're new to my channel, hi! My name is Stéphanie and I live in an old terraced house in a big English city. This is my slow living vlog. Slow living is a silly and sort of trendy phrase at the moment, but the concept is actually pretty simple. It's about making time in our busy modern lives to slow down, do things properly and mindfully, and appreciate the passing seasons. I love cooking and baking from scratch, it's how I unwind at the end of each day. I also love going for long walks without my phone, working on craft projects, spending time outdoors in nature, and reading. Perhaps for you, slow living might look like turning your phone on silent and sitting with your knitting or crochet each evening, or it might be sitting down to dinner at a table rather than in front of the TV, sharing a meal with family whilst you catch up on what you did that day, or a dinnertime video call with a friend. The cottagecore, woodland fairy vibe of slow living is very popular and very enticing - who doesn't love the idea of throwing in the towel and moving to the woods where you wear fancy dress each day - but it's entirely optional! Even those of us who live in towns and cities can enjoy slow moments and make time to enjoy some peace and quiet amongst the hubbub of daily life. Each week I share simple, seasonal moments from everyday life. I share recipes I've enjoyed making, the food and flowers my husband and I grow on our plot at the local community gardens, time in my back garden, and the craft projects I've been working on. Pizza dough recipe: 500g strong white bread flour (or a mix, you can use 20% wholemeal if you like), 325g warm water, 1/4tsp sea salt, 1tsp instant yeast Combine the ingredients by hand or in a stand mixer, and then cover the dough with a towel and leave it to rise somewhere warm for 30 minutes or so. Shape it as I do in the video, and then it's time to layer your toppings. My go to pastry recipe for shortcrust pastry: 200g all purpose flour (plain flour in the UK), 100g margarine, a very small amount of cold water to bind. Add the water last, you only want to add enough that the pastry comes together, so go slowly with a steady hand. For the tofu feta I use this recipe: https://rainbowplantlife.com/greek-st...
