Join me for some slow and quiet autumn days at home in England where I’m cooking, baking, and spending time in the garden. This week I'm making fresh pasta, baking chocolate cookies, and spending some quiet time pottering about at home with my craft projects. I've also been enjoying my late season flowers and picked some storm battered dahlias at my plot down at the local community gardens to bring home with me. If you're new to my channel, hi, my name is Stéphanie and I live in the suburbs of a big English city with my husband and cat. Eighteen and Cloudy is my slow living vlog. Slow living, mindfulness, and cottagecore sort of all go hand in hand, but at its heart slow living isn't just a fad or an aesthetic trend. It's about making time in our busy modern lives to appreciate the passing seasons so that we can relax and find meaning in our everyday lives. For me, that looks like a lot of cooking and baking from scratch, as those are some of my favourite hobbies. My husband and I both love to cook, and we also love to grow food and flowers on the plot of land we rent at the local community gardens. Each week I share recipes I've enjoyed making, quiet moments from everyday life, stories from our vegetable plot, my simple and seasonal routines, and the craft projects I've been working on in recent days. I love to make things by hand and particularly love quilting. If you're a creative soul yourself, perhaps you like to sew or to knit, you might enjoy settling down with a cup of tea and joining me whilst you work on your own crafts. 00:00 saying hello 01:15 making homemade pasta 04:29 signs of autumn 05:05 cutting flowers for home 08:40 preparing dinner 11:49 shaping and cutting pasta 17:53 making chocolate cookies 22:12 making a cosy home 24:33 working on my quilt 28:56 afternoon tea Chocolate cookies 250g plain flour 100g grape molasses (see video for alternatives) 60g hard butter (I used unsalted plant based Flora) 1/2tsp bicarbonate of soda 1tsp cinnamon powder 2tsps cocoa powder (or drinking chocolate) 1tsp milk (I used soya milk) pinch of salt Combine the ingredients by hand or in a stand mixer. It should be a firm but flexible dough. Roll it out to 6mm (1/4") and use cookie cutters to create shapes. Bake your cookies at 160C (320F) for approximately 10 - 15 minutes, adjusting oven times depending on whether you want them soft like American cookies or hard like traditional English biscuits. Be careful, they burn very easily, so keep a close eye on them whilst they're baking! These cookies are lower sugar than many sweet treats. I try to stick to a lower sugar diet because of a health condition that runs in my family, and so my taste buds are used to lower sugar treats. If you would like to, please adjust the recipe to include more sugar. However, the recipe does require a liquid sweetener like molasses or honey to keep the balance of wet to dry ingredients in check. So if you would like to add more sugar, add it to the ingredients rather than reducing the molasses.
