🥦 Broccoli Almond Soup Prep Time: 5–10 minutes Cooking Time: 15–20 minutes Serves: 3-4 people 🥗 Ingredients Onion – 1 no. (roughly chopped) Garlic – 5–6 cloves (sliced) Hot Water – 2 glasses Almonds – 8–9 nos. (roughly chopped) Broccoli – 250 g Vegetable Stock – as required Salt – to taste Black Pepper Powder – to taste Butter - 1 Table spoon 👩🍳 Method Heat a deep pan on high flame and add butter. Add onion, garlic. Sauté on high flame for 2 minutes. Add hot water, salt, and almonds. Stir well and bring to a boil. Once the water comes to a rolling boil, add broccoli, cover, and cook on high flame until soft and tender. Switch off the flame and strain the mixture using a sieve. Reserve the stock and allow both the mixture and stock to cool. Transfer the cooked mixture to a blender, add some reserved stock, and blend into a smooth, semi-thick puree. Strain the puree into a pan, adjust the consistency with more stock if required, and bring to a gentle simmer. Taste and adjust salt and black pepper as needed.
