In a mixer, combine 1 cup of rye flour, 1 1/2 cups of flour, 2 tablespoons of butter, 1 1/2 teaspoons of salt, 1 tablespoon of brown sugar, 3 tablespoons of cocoa, 1 teaspoon espresso powder, 1/2 teaspoon fennel seeds, 1 3/4 teaspoons of yeast, 1 1/8 cups of warm water, 2 tablespoons of cider vinegar and 2 tablespoons of molasses. As it comes together, add an additional cup of flour. Once done in the mixer, transfer to a buttered bowl and cover. Allow to rise for 1 1/2 hours. On a floured surface, shape the dough into a loaf and transfer it to a buttered loaf pan. Allow to rise for 1 hour. Bake at 375° for 35 minutes. Allow to cool before cutting.
